Ruben Loaf

3-1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons sugar
1 teaspoon salt
2 cups buttermilk
2 eggs
1/3 cup vegetable oil
1 pound thick sliced deli corned beef, chopped
1 can (14-1/2 ounces) sauerkraut, chopped
1 cup shredded Swiss cheese


Preheat the oven to 350°F. Coat a 9" x 13" baking dish with nonstick cooking spray.

In a large bowl, combine the flour, baking powder, baking soda, sugar, and salt.

With a wire whisk, beat in the buttermilk, eggs, and oil until moistened.
Stir in the corned beef, sauerkraut, and Swiss cheese.

Spoon into the baking dish and bake for 55 to 60 minutes, or until golden and a wooden toothpick inserted in the center comes out clean.

I've been going through my box I have here and typing them out. It was my grandma's.

I think I am making this tomorrow. I had to cook my own corned beef, no deli had any..stupid town. It's all ready to go for tomorrow! I can't wait!

Hey! This was pretty good! It's like a Ruben sandwich in biscuit dough. It makes a ton, feeds an army! I'd put more corned beef in it next time. Thanks for the recipe Neen!
